The Obsidian Stout from Deschutes Brewing in Bend, Orgeon is another that Wild Tomato likes to keep flowing on its taps. This dark, robust stout draws on espresso, chocolate, roasted malt and black barley. A combination of four different hops (Nugget, Willamette, Millenium and Northern Brewer) cuts the sweetness of the malt to round out the flavor.
At Wild Tomato, you can find the Obsidian Stout on nitrogen, giving it a smooth, velvety texture and creamy head. More specifically, nitrogen taps use about 70% nitrogen to 30% carbon dioxide. The lack of carbon dioxide foregoes the lively, aroma-forward bite of more traditional tap beers and replaces it with a creamy texture.
This dark stout is going to pair best with something equally as robust. Try the Fun Guy Burger or, if you still have room for it, the Gluten Free Brownie Sundae to finish off the meal.
