When not working at Wild Tomato, Jackson can be found training for races all over the country or finishing the last few pages of Malcom Gladwell's latest.
A year-round Door County resident and University of Iowa grad, his races have taken him to California, Arizona, Florida, and other far-flung destinations. Last year he completed the Ironman Wisconsin, considered one of the toughest of all endurance races.
But as far as his races take him, the close-knit community of Door County brings him back. "I like the fact that you can go to the YMCA, or out a restaurant and know everyone," said Jackson.
That same close-knit quality is what he values of the Wild Tomato staff. "I really appreciate the year-rounders type of bond of staff."
Perhaps you'll see Jackson at Wild Tomato, or if your timing's right you could catch him enjoying a bowl of mushroom barley soup and hanging out with Paul at CZ Soup Bar. But, if Jackson had it his way, you would see his name on the Non Fiction Best Seller list.
